This book is a collection of simple, comforting meals inspired by the kind of food my mother made when she was growing up in Dublin, Ireland — and the kind of dishes I still turn to today. These are gentle, nourishing recipes for seniors, for anyone who doesn’t want to stand on their feet for hours, and for busy families who want to eat well without complicated steps or fancy ingredients.

Easy Comfort Cooking for Retired Life grew out of the kind of meals I grew up with — food that was simple, nourishing, and made with care, without fuss or complication.  My mother was born and raised in Dublin, Ireland, one of eleven children in a lively, close-knit family. In their home, cooking was about making the most of what you had and feeding people well. The meals were hearty, familiar, and full of warmth — the kind of food that fills a house with good smells and brings everyone to the table.


In 1954, my mother and her family immigrated to Canada. Over the years, she blended the old-world Irish way of cooking with the practical, everyday foods she discovered here. Some of the dishes you’ll find in my book carry that gentle Irish influence, while others reflect the Canadian meals she came to know and love. They’re not meant to be strictly traditional, but rather a comforting mix shaped by two homes and a lifetime of family cooking.


Many of these recipes are inspired by the meals my mother made often, and by the ones my father especially loved. They are the kind of dishes that feel reassuring, filling without being heavy, and kind to both body and spirit.


I hope this little collection brings a bit of that same warmth into your kitchen, and helps everyday cooking feel simple, calm, and comforting once again.
